Watermelon Pie (haven't tried yet)

Ingredients

1 (3 ounce) package watermelon-flavored Jell-O
¼ cup hot water

1 (12 ounce) container frozen whipped topping, thawed
2 cups diced watermelon

1 (9-inch) prepared graham cracker crust

Directions

1. Combine Jell-O and hot water in a large bowl; stir until dissolved and cool, 10 to 15 minutes.

2. Fold dessert topping and diced watermelon into gelatin mixture. Pour mixture into the prepared crust. Cool in the refrigerator until set, about 3 to 4 hours.

El Chico's Pink House Dressing

 

There is a Mexican Restaurant in Shreveport, Louisiana called El Chico’s.  Shreveport is the only location that makes this dressing.  It’s very versatile; you can eat it with chips, add it to your taco salad, tacos, fajitas, and much more.

1/2 – 3/4 cup of Miracle Whip Salad Dressing (do not use real mayo)

1/2 teaspoon paprika

1/2 teaspoon garlic powder

1/2 teaspoon white pepper

1  1/2 teaspoons sugar

1/2 cup of milk

Mix all together and chill at least 2 hours. The mixture will thicken when chilled.

Oatmeal Peanut Butter Cookies

 

Ingredients  

• 1 cup creamy peanut butter
• 1 large egg (can substitute 1/4 cup applesauce)
• 2/3 cup maple syrup
• 1 1/4-1/2 cup oats

Instructions 

• Preheat oven to 350 F.
• In a large bowl, combine peanut butter, egg and maple syrup. Mix well until thick.
• Add oats in slowly, until mixture is thick. The consistency should be like a sticky cookie dough.
• Using a tablespoon, place heaping tablespoons of mixture on a greased baking sheet. Use your hands to gently form into rounds and press down slightly to flatten.
• Bake in the preheated oven for 10-12 minutes, until cooked through. Let cool and serve.

Magic Oatmeal Cookies (2 ingredient)

● 1/2 cup apple sauce (or one overripe banana)

● 1 cup of quick oats.

● Instructions ●

Mix the oats and apple sauce. Form balls and flatten them on a cookie sheet.

Bake at 350 for 12 to 15 minutes.

Food For The Gods Recipe

 

• My BAKING YESTERYEAR RECIPE:

• Whites of 3 eggs • 1/2 tsp salt • 1 cup (200g) granulated sugar • 1/2 cup (65g) fine graham cracker crumbs • 1/2 cup (75g) chopped, dried apricot (or dates, figs etc..) • 1/2 cup (60g) chopped walnuts METHOD: 1.) Preheat the oven to 325ºF (165ºC). 2.) Line the bottom of a 9-inch (23-cm) springform pan or pie pan with a circle of parchment paper. Lightly grease both the parchment and sides of the pan. 3.) Beat the egg whites and salt to stiff peaks. 4.) Gradually beat in the sugar, 2 tablespoons at a time, until stiff and glossy. 5.) Gradually fold in the graham cracker crumbs, then fold in the dried fruit and walnuts. 6.) Turn into the pan, smooth the top, and bake for 35 to 40 minutes. The top should be a pale gold color when done. 7.) With the pan remaining in the oven, turn the oven off and leave the door ajar for 30 minutes. After which, transfer to a wire rack and cool in the pan for 20 minutes. 8.) Free the sides of the pan with a sharp knife and invert onto a serving dish or cutting board. Remove the parchment paper before cutting and serving.

My Heart Is Broken

 Cass Passed away at 9:48 pm...He suffered a stroke on October 17th and his condition never improved. I'm actually retroactively posting this 8 months later and it's still hard for me to talk (or write) about.

Atomic Chicken Quarters

 Coat chicken with Louisiana hot sauce and bake at 400F for 1 hour and 30 minutes. Add more hot sauce about halfway through.
